An eggplant side dish so tasty, your friends and family wont stop talking about it for days to come!
Cut the eggplant into medium sized slices and dip one side of each slice in egg wash. Press the freshly dipped side onto some grated cheese. Heat olive oil in a pan and slightly brown each slice.
Layer the slices in a casserole and top with Wingreens Farms Basil Pesto. Sprinkle the thinly sliced olives on top and bake at 180 C till the pesto is warm.
